Easy Ritz Thin Mints (Healthier)

These are so easy to make, with just 3 ingredients! And a perfect copycat recipe for thin mints cookies :) The best part is they are healthier than the other thin mints & similar girl scouts.

You’ll Need:

Ritz crackers
1 bag semi-sweet chocolate chips (I used Ghiradelli semi-sweet chips)
2 tsp Coconut oil
1/4 tsp Peppermint extract

OR Andes mint chocolate baking chunks


1) Melt your chocolate
2) Combine the peppermint extract, and coconut oil to the chocolate. Dip a cracker in the chocolate, repeat, and freeze until chocolate has set

It’s that easy! Soo delicious.
