This simple recipe combined the Italian Prosciutto meat with a Parmesan based heavy cream sauce. Simple enough to whip up in a flash, and definately worthy of my dinner table! Enjoy..
1 pound fettuccine pasta
1 tablespoon olive oil
1 tablespoon unsalted butter
3/4 cup diced onions
1 tablespoon minced garlic
2 ounces prosciutto, cut into 1/4-inch strips
1/4 cup dry white wine
1 1/2 cups heavy cream
3/4 cup frozen sweet peas
3/4 teaspoon salt
1/2 teaspoon fresh cracked black pepper
3/4 cup grated Parmigiano-Reggiano
1/4 cup chopped fresh parsley leaves
1) Bring a large pot of water to boil. Add pasta, continue to boil.
2) set a large 12-inch saute pan over medium high heat while the pasta cooks, add oil and butter. Once butter has melted, add onions and saute until translucent, about 3 minutes. Add garlic to the pan and saute for 30 seconds. Place prosciutto in the pan and saute for 1 minute.
3) Deglaze the pan with wine and cook until almost evaporated ~ 30 seconds. Add cream, peas, salt and pepper to the pan and let the cream reduce by half ~ 4 to 5 minutes.
4) Once completely cooked, strain pasta from the water, and place in a large heat resistant bowl. Pour sauce over pasta then sprinkle with cheese and parsley.
