Simple Delicious Peanut Chocolate Cake

This recipe is a quick hack based on regular chocolate cake.

In order to meet the 3 ingredient pantry requirements (for our 3 ingredient challenge), we’ve opted to use Chocolate cake mix, chocolate frosting, and peanuts. However this is the full recipe for those with extra time & feel more adventurous. Enjoy!

INGREDIENTS:
1 cup white sugar
1 1/8 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1 cup cold, strong, brewed coffee
1 cup chopped or ground peanuts
1 box chocolate frosting

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch pan. Sift together flour, cocoa, baking soda and salt. Set aside.
2. In a medium bowl, cream butter and sugar until light and fluffy. Add egg and vanilla and beat well. Add flour mixture, alternating with coffee. Beat until just incorporated.
3. Bake 350 degrees F for 35 to 45 minutes, or until a toothpick inserted into the cake comes out clean.
4. Allow the cake to cool, then mix the peanuts with the frosting and drizzle over the cake. Enjoy!
